How to make a Scalawag cocktail

1 bunch thyme
2 cup sugar
2 lemons
Black tea

1. Make a simple syrup: Add thyme and sugar to a small saucepan with 2 cups of water. Simmer uncovered until thick, around ten minutes.

2. Make a pot of black tea. Let steep and cool.

3. Juice lemons and use a vegetable peeler to make a garnish of lemon rind if desired.

4. Add ice to a cocktail shaker. Add 1 part thyme simple syrup and 1 part lemon juice. Depending on how strong you like your cocktail, add 2 or 3 parts bourbon and 2 to 4 parts black tea. Shake, and serve with thyme and lemon rind as garnish.
